Ahh... the Holidays are here..and it's time once again for Crockpot Mashed Potatoes! We talked about this recipe on the morning show several years ago (despite Dean's Crockpot issues..ha ha) and it's a holiday must for our family dinners. Hope you enjoy them too!!
Yummy, easy, creamy, buttery, tasty, seconds, thirds, and devoured... are just a few words to describe these CROCKPOT MASHED POTATOES. Be warned though, once you start making them, you'll be asked to bring them to every holiday dinner for years to come. ENJOY!!
CROCKPOT MASHED POTATOES
- 5 pounds of diced potatoes ( I prefer the red potatoes)
- 8 oz cream cheese
- 8 oz sour cream
- 4-5 chicken bouillon cubes
- stick of butter
- minced garlic (2-3 tsp. or more)
- salt and pepper
Dice potatoes and boil in large pot of water with chicken bouillon cubes and minced garlic. Drain when tender but reserve several cups of garlic chicken water for blending. Mash potatoes using some of the garlic chicken flavored water. After potatoes are mashed, blend in sour cream and cream cheese. Place potatoes in crockpot (or large bowl) and refrigerate (overnight is fine!) Plug in crockpot and heat potatoes a few hours before dinner. Insert the stick of butter into center of hot potatoes and add salt and pepper before serving. YUM!!
TIPS for better potatoes....
- Don't use too much garlic water for blending as the sour cream and cream cheese will add additional moisture.
- I also add a little milk when mashing the potatoes for extra creaminess.
- French Fried onions and a little shredded cheese make great toppings!
- Doubling the recipe is a good idea for large groups and leftovers!
